How do moray eels taste?

Food Value: Although moray eels in the tropics are rarely eaten due to the danger from ciguatera poisoning, California moray are safe and considered fine to eat, at least the frontal portion of the eel. The flesh is white colored and considered flavorful with a slightly sweet taste; texture is a little soft.
