Why is there so much gristle in ground beef?

Sometimes gristle can be found in ground beef. Ground beef is made of four components: muscle tissue, fat, collagen and elastin. The elastin is stretchy and incredibly tough. Elastin does not break down when applied to heat and this is where gristle comes from.
